Desert Treat: Oatmeal Jam Bars

You can never go wrong with a good dessert!

Perfect for an afternoon snack or to pack in lunches, Oatmeal Jam Bars are sure to satisfy any sweet tooth. With a hands on time of only 15 minutes and a cook time of 35 minutes, it also proves to be an easy recipe.

What you’ll need:

1 lemon

1 1/3  cups all purpose flour

1/4tsp. baking soda

1/4tsp. Salt

3/4 cup quick-cooking rolled oats

1/3 cup packed brown sugar

6 oz. cream cheese, softened

1/4 cup butter, softened

3/4 cup seedless raspberry jam

 

Instructions:

Preheat oven to 350 degrees. Line a 9-inch square baking pan with foil, extending the foil over the edges of the pan. Lightly coat foil with nonstick cooking spray.

Remove 1tsp. lemon zest and squeeze 1tsp. juice from the lemon.

In a medium bowl stir together flour, baking soda and salt. Stir in oats, brown sugar, and the lemon zest. Set aside.

In a large bowl beat cream cheese and butter with mixer on medium for 30 seconds. Add flour mixture; beat on low until crumbly.

Remove 1 cup of crumb mixture and set aside. Press the remaining crumb mixture into the bottom of the prepared pan. Bake for 20 minutes or until slightly crisp.

Meanwhile, in a small bowl combine jam and lemon juice. Carefully spread mixture over hot crust. Sprinkle remaining crumb mixture over top.

Bake about 15 minutes more or until the top is golden. Cool in pan, use foil to lift out, then cut into bars.

Makes 16 bars. Each bar approximately 173 cal. 7 grams fat, 20mg chol, 121mg sodium, 25 grams carbs, 11 grams sugar, 2 grams protein.
